So, as you can see from the title this post is focusing on the products produced by KNO₃ and Sugar being burnt. From my experiments I can conclude that

The solid product formed is soluable and white, since it is soluable I am guessing it is where the NO₃ goes.

C₁₂H₂₂O₁₁ + KNO₃ --> Does anyone know what the products are?

I'm guessing water, CO₂, and possibly also just C since I have noticed that there is some black ash residue.

Solid is most likely some mixture of K₂O and K₂CO₃ (could be entirely the latter, but it may get decomposed to CO₂ and K₂O if the temperature is high enough), plus - if there is some brown/black color - some probably hard to analyse mixture of hydrocarbons/decomposed carbohydrates.

When it comes to products - apart from two obvious non-solid ones - N₂.
