sodium acetate questions

Hello I'm not sure if this is the right section to put this in so feel free to move it.   I want to make sodium acetate i know it is made from backing soda and vinegar and then boiling it.  But usually the it burn and chars. could i reach the desired result if i heat in the microwave?  Or does any one know a better process other than just buying it.

Whenever I reacted household backing soda and household vinegar, I always got a grey liquid, so I'm thinking the two items may not be pure.

At any rate, trying to boil an organic compound to dryness is very likely to char it.  Boil it down half way, then leave it on a sunny window to evaporate further.

Kitchen chemistry tends to involve a lot of waiting.
