Me and a few friends cut open a new (not discharged) battery and emptied out all of the chemicals inside of it (we wanted the battery casing--we threw the chemicals in the trash). From what I read, the main chemical we need to be careful of is the potassium hydroxide--though I could be wrong. I may be being over-concerned, but how careful do we need to be about cleaning up the place where we worked? (We did it in our dorm room's public bathroom, so I just want to make sure we don't endanger anyone else in the dorm). Is it sufficient to just wipe the sink down with paper towel?

Depends on the battery type. In most cases flushing wih a lot of water will be enough, although in general idea of putting unknown chemicals down the drain is wrong.

Yeah, I was not exactly the one disassembling the battery...I myself was not very comfortable with it being done in the sink where other people brush their teeth etc.

It was an alkaline AA.
