Enzyme urate oxidase question

Explain "why the observation that 5-hydroxyurate formed in the urate oxidase reaction is optically active" proves that dehydroisourate anion is hydrated while bound to the enzyme

It is on urate oxidase. My biochemistry pre-lab question, I can't seem to figure out how this works.

Without going into the details of that particular reaction, the optical activity in the prodcut usually relies on the reaction intermediaries not being planar (e.g. >C=R), so the chirality is preserved.
