Today, a question occurred on my mind when I cook a egg. The protein expanded when it is heated. I am wondering what chemical process has happened to the egg?
Do you think you can give me any suggestions or materials to find the answer?

Sure! It's called denaturation. Here is a link to Wikipedia and it has a section on denaturation.
