H3CH2C-Mg-Br + H2O ----> H3CCH2C
does the Mg-Br just go away with the addition of water?

Grignard Reagents aren't just a way to alkylate carbonyls, but they're strong Lewis base and will easily deprotonate water and react that way....
Your reaction formula is also wrong btw...
