Was yellow present immediately, or did it show AFTER pink has enough time to get to the other electrode?

My bet is that you were oxidizing Mn2+ to permanganate, which in turn get reduced to MnO2. Mn is active enough to displace hydrogen so it won't get reduced on the electrode - H+ will, hence hydrogen bubbling.
