Emulsifiers and Stabilizers

Hello,

I am working on a new concept for a soft-serve frozen dessert. I am trying to learn about emulsifiers and stabilizers.

In particular, I am trying to figure out if there are all-natural ones, and where I can purchase them to add into a soft-serve mix.

Any information would be greatly appreciated!!!

First, tell me how you define "all-natural"? There is no legal or FDA definition for this term. It means different things to different people.
