Hi JzalkMry!

Soot is not actually an amorphous graphite, at least if to trust wikipedia (http://en.wikipedia.org/wiki/Amorphous_carbon). It differs in a way that it contains considerable amounts of other elements, especially hydrogen. The point is that soot sonsists to considerable degree of policyclic aromatic hydrocarbons (http://en.wikipedia.org/wiki/Polycyclic_aromatic_hydrocarbons) and is very similar to a coal, while amorphous carbon is a pure form of carbon that doesn't have any crystallic form in compare with graphite and diamont.
