Cabbage Juice Indicator

Hello, I'm new here. I'm in 11th grade chem. I have been trying to do this lab for so long now but I it's just so hard. I'm sooo confused. Can someone help me please?

Prepare the cabbage juice indicator.
Test the solution with the cabbage juice indicator paper. Record results. An acid has a pH of 0-6; 7 is neutral; and a base has a pH of 8-14. As we have studied, a H+ (Hydrogen ion) is necessary for something to be an acid; additionally OH- (Hydroxide) is necessary for something to be considered basic.
Bring the solution to boil, then place a plate on top of the boiling sauce pan to collect some of the steam. Be sure to use caution -- steam is EXTREMELY HOT.
Test the condensate that has collected on the plate with the cabbage juice indicator paper. Record results.
Boil until half the solution has been boiled away.
Test the remaining solution with your cabbage juice indicator paper. Record your results.

Color of Indicator      

Questions:

How does the indicator paper react with the original solution? The condensate? The final solution? What can you conclude from this?
There are several things that could have happened in the experiment:
NaHCO3 --> Na2O + CO2
NaHCO3 --> Na2CO3 + CO2
NaHCO3 --> NaOH + CO2
Balance all of the equations above. Which one is most likely to have occurred?

that's one of my favourite chemistry experiment.

i remembered purple cabbage was used.

the purple pigment was extracted by putting some crushed cabbage inside ethanol, then heat the ethanol in a water bath.

we prepared 8-10 beakers of the purple solution (purple pigment + ethanol).

then we added solution of known pH into each baker, and recorded the corresponding color for a particular pH.

it was fun.
