Why do we need to protect food from air exposure?

I know this has to do with somehow the food starts to break down, but can anyone explain what actually happens and why it is important to get food from contact with air.  Thanks

Degradation reactions generally occur much faster at room temperature than they do under refrigerated conditions.  For example the protein chains in meat can break down into shorter chain carboxylic acids / carboxylate salts which can make meats go rancid.

oh okay thanks.  So basically in general, when foods are exposed to open air the carbon chains break down into short chains and the food goes bad?
