How to tell whether a reaction is endothermic or exothermic

If you mix NH4Cl(s) and H2O(l), it's apparently endothermic, but why, and how do you know if the enthalpy of reaction isn't given? I'm assuming it has something to do with the dissocation enthalpy and the enthalpy of hydration, but in general, how do you know if you're just given some ionic solid that you have to dissolve in water?
