To start the ester synthesis you need to protonate the C=O group, and I was wondering if the acidic COOH proton of carboxylic acids could dissociate, only to protonate the C=O group on the same molecule (or most probably an identical, different molecule) instead?

Yes they can catalyse their own reactions.
Development Chemists do it on Scale, Research Chemists just do it!
