Protein reaction

In an article dealing with protein spectroscopy a term "protein reaction" occurs.
Could anybody give a clear definition of the term? I need to translate it into another language and a simple way of translating each of the two words and putting them together does not work: such combination hardly makes any sense.

Can you provide more context to how the term "protein reaction" is used?
