Scales for weighing water in processign

I am interested in trying to make a simple beverage. I was told that in a production environment, everything is done by weight to include how much water is added to the mixing tank.  I toured a small facility and when I looked at the mixing vessel/tank, I didn't see a scale.  I also failed to ask where the scale was located.

Can someone tell me where the water is weighed prior to entering the tank?  I am trying to make sense of this.  I looked at some tanks on Alibaba and they are only about $3,000 shipped to USA for stainless steel at 300 Liters.  But they don't have a scale.

I would be grateful for any feedback.

Well for preparing large quantities of liquids, people would use something like these scales from Cole Palmer (I recognize the company from places I've worked.  I'm sure there are other similar sources for large scales.)

Sometimes I've used these to make 20 - 50 liters of eluent, with similarly large stir plates.  Although if you go above 100 liters, you'll want a top-down impeller to mix, as magnetic stirrers work less and less well under too much weight of liquid.  You'll just tare the vessel, and then charge it with water  from a hose to the correct calculated weight.
