Diazomethane reacts with carboxylic acids to produce methyl esters. The second and third step you should know.

I was just confused that carbenes also do form three membered rings with the olefinic bond. But here the -COO's H is way too acidic to react with it.

Carbenes do form cyclopropanes with olefins, but diazomethane is not a carbene until you heat it or hit it with light.
