As in, was there a specific time, the year(s), where they were studied to a great extent?
Also a vague question, but could you also list any possible scientific papers that focused on these subjects?

You have asked a very open-ended question. The subjects continue to be of interest. Kurt Mislow:

(this list might help)
You might also look at people who have worked on stereochemistry as it relates to enzymes, such as Alexander Ogston who wrote about citrate in 1948 in Nature, or the work of John Cornforth, Duilio Arigoni, and Frank Westheimer.

In my personal opinion , this question forever will be connected to the work of both
Louis Pasteur
and his discovery of chirality with tartaric acid, and
Emil Fischer
and his sugars
... which puts my timeframe at around 1850-1900
not much of journals around then - hence very little papers to bring to your attention - in the early years, as the first regular chemical journals began to pop up in the 1870's

There is a theory which states that if ever anybody discovers exactly what the Universe is for and why it is here, it will instantly disappear and be replaced by something even more bizarre and inexplicable. There is another theory which states that this has already happened.
