If I do a Claisen condensation between ethyl acetate and ethyl benzoate, do I get the following? Or did I do something incredibly stupid.

Theoretically, yes you would get that.

In practice you may get that and some side reactions.

Thank you for your response. Perhaps the program wants me to include the side reactions as well as it keeps counting me as incorrect. I shall look into it.

It undergoes self condensation as well, but the program counts me as wrong yet again. I shall have to talk to my TA. Thanks for your help though.

I think I'm only seeing part of the problem. The product shown is the neutralization product. If it wasn't acidified, then the product would be different.
