Assuming 1 liter of carrot juice contains 40 grams of sugar
using the calculator at
http://homebrewingcaps.com/homebrew-recipe-calculator/I get dry taste as less than 4 percent ethanol
Seems to me that brewing yeast could convert most all the sugar in carrot juice to ethanol in less than 4 days
I of course cheated and did not write out the formulas as shown in WIKI
