Hello, my name is Peter and I am professional chef from Poland. We are using liquid nitrogen in molecular gastronomy and I have small question. Liquid nitrogen is -195,8 degrees Celsius (-320 F) when it's inside dewar/container. But what happens when we put it outside to the metal vessel for example in the room temperature of 20 Celsius degrees (68 F), will it be still -195,8 Celsius (-320 F) inside this vessel before it turns into a gas or will it be little heated before? I mean what temperature would thermometer shows when we measure it inside the metal bowl?
I've heard from somebody that it is heated little bit and it would be around -175 or -180 Celsius (-283 or -292F) degrees outside the dewar.
Could anyone help me with this?
