acylglycerol sources

I have been trying to create edible water barrier for food. One of the prime candidate is acylglycerol but i have difficulties in finding a good source of this product for food manufacturing purposes. Can anyone suggest sources of this substance or how to make them please?

What food-stuffs do you know? What is the structure of an acyl glyercol?

I'm out of my depth here. Can you clarify the manner in which an acylglycerol might function as an "edible water barrier for food", i. e., do you seek a humectant or dessicant for this purpose?
