Help: Reverse spherification with an oil base
« on: September 04, 2020, 01:14:32 PM »
Hi, I have been trying to encapsulate an oil-based solution in some sort of gel. The whole product should be edible. Ideally I would be able to do reverse spherification as described here (https://www.chefsteps.com/activities/reverse-spherification?context=spherification). Normally an aqueous solution with 1-2% by weight Ca2+ is dropped into a bath of 0.5% Sodium alginate. An alginate skin then forms around the base liquid.

However, I want to encapsulate an oil. I have tried to dissolve calcium lactate in a mixture of water and alcohol (40%) but it will not mix with MCT oil. I have tried using xanthum gum, glycerol, and glycerol monostearate to form an emulsion without success.

If anyone could offer any help I would greatly appreciate it.
