I was using the method described in

but used fresh pineapple juice instead of orange juice.
During titrations, I noticed that the colour of the analyte would change after some time.
Instead of remaining as dirty green the colour of the analyte would change to a dark yellow after around 30 minutes.
What could be the cause of this change?
