According to Szabo et al. (2022), the answer is generally yes... However, you might wish to refer to the work of Grootveld et al. (various) on the effects of heat on cooking oils for a slightly different take.

At fatty acids, "saturated" often compares double bonds with bonds saturated by hydrogen. But heat in the air tends to oxidize the fatty acid, mainly at the double bonds, and possibly build bridges among the acids. So it's not exactly the same idea. Maybe the question is answerable, but one should double-check what "saturated" is to mean in this case.
