What is the Chemical Reaction in Saltpeter Smoke Bombs?

With his school's blessing, my son and I have homeschool day once/month where we work on projects of his interest.  Next week, we're doing some chemical reactions.  Among them is the potassium nitrate and sugar smoke bomb.

Can anyone tell me what is the chemical reaction in this?  I know KNO3 and C12H22O11 go in.  What comes out?
