Im pretty sure that adding sugar to water and reducing the pH to about 5 will hydrolyze the saccharide into its monomers glucose and fructose.

Fry is right,  adding acid to a solution of sucrose will result in the inversion.

Ive used hydrochloric acid to do this a couple of times but im sure any acid catalyst would cause inversion / hydrolysis.
The only stupid question is a question not asked.

Hello and tanks for your help  :D

Actually; I want to preparation EtOH from sugar and in this method sacharose change to +D-Glucose and D-fructose then Glucose changes to EtOH
In your opinion, is this Conscionable, Adding some Zymogenic, which taken from juice of grape to acidic solution of Glucose and fructose?  :-*
