Pyruvate conversions in water
« on: April 10, 2008, 02:23:37 PM »
What reactions can pyruvate undergo if one puts it into a high pH solution? I would assume that it has something to do with the phrase "Pyruvic acid polymerizes and decomposes upon standing" in Sigma product sheet, but I can't figure out what exact reactions might happen there.
Thank you.

There are two types of acidic protons in pyruvate.  Can you identify them?
