Crystallization of xylitol

Hello, new to crystallization. The melting point of xylitol is ~95 C and it can easily be supercooled to room temperature. The viscosity of the melt in room temperature is high and the crystallization after seeding extremely slow. Any ideas how to accelerate nucleation and crystal growth. Use of solvents?

why you dont think you will  crystallize it in cool water! good luck!
