I'm trying to find out what the products of cellulose combustion are. I know they include water, carbon monoxide, and carbon dioxide, but I think there are more. Are there any carcinogenic compounds produced through cellulose combustion?

Nope. Only water, carbon dioxide and maybe depending on conditions carbon monoxide.
