I am doing experiments on moisture control on cake/powder form material.  The machine used is heating the material and then turning out results in moisture release.  Is there an affect on the protien in different temperatures for releasing H2O... leading to a re-release of moisture even after a second test?  Or are the variations in readings coming from pockets in the sample?
