The question was to choose the appropriate solvents for isopropyl alcohol. Heres the list of solvents.

Acetone
Water
Hexane
Carbon tetrachloride
ethanol
toluene
methanol

And I don't get why the answer is only water and methanol. So all the other polar ones aren't good? What am I missing here?

This was a badly thought out question, and you are right to dispute it. Isopropanol is soluble in allof those solvents (see attached solvent miscibility table.pdf).

The answer is all of them could be appropriate solvents!

Should I ask my professor what he means in the one office hour before the test? I know this is somewhat still going to be covered even if only a few points. All the other questions involving this I got correct but I don't want to come off as a know it all. I will ask my question Monday morning and hopefully I can get a clear answer. He is really good with these kinds of things, always makes corrections right away.  ;D
