Caffeine is a very weak base, hence its mixture with citric acid is mostly unionized.
Wikipedia:
http://en.wikipedia.org/wiki/Caffeine_citrate
show correcly structure of so called caffeine citrate as physical mixture consisted of caffeine and citric acid
