Hard water appears no more viscous than soft water.
Having grown up in a "hard water" area the major difference I notice is the (relative) volume you consume in order to feel like you have had a "drink".
In soft water areas I can drink liters of water and still be thirsty. In the hard water area i grew up in I would have not felt thirsty after 300 mL.
