what is the ratio of ester and amide when it reacts with acyl chloride? how should I enhance proportion of amide?

Actually my question is how much alcohol would interfere with amine with electrophilic reagent?
would it be always necessary to protect alcohol when I want amine as reactive site with electrophilic reagent?
