Bioanalytical Instrumentation

Im a chemistry student and am currently enroled in an instrumentation class. The lecture is great and the professor has a great deal of knowledge. The lab however seems poorly constructed, for that students will have completed, on average, a total of 15,000 words total throughout the semester. I just figured it was some experimetal course we were so "lucky" to be a part of, as our school is currently apart of chemical education research. I was just looking for agreement that we were being unfairly treated and that the grass is greener on the other side. How do other schools format this class and do you get more hands on and directed instrumentation learning? Our class consists of watching the professor use the instrument for an hour and then spending countless hours writing a lab report to almost publising standards!
