This is a very open ended question. What is being saponified? How is the glycerol being sythesised?
I'll assume the saponification of fats or oils - which are hydrophobic - in which case the ethanol (?athanol?) is used to solubilise the hydroxide.

Ethanol could be a product of a saponification, or a solvent maybe?? more information please.

HCl can be used for acid hydrolysis of an ester but this is not saponification (base hydrolysis) it is the opposite of the Fischer esterification.
