Yeast in Fermentation process

Yield of ethanol is mostly about survivability of the yeast.

We were wondering why Yeast can't survive too high concentrations of ethanol?
Something to do with the denaturation of proteins?
Not really sure on this, any help is appreciated

I can offer a highly speculative answer.  Many water-soluble proteins have a hydrophobic core and a hydrophilic exterior.  They tend denature in organic solvents because the hydrophobic side-chains can now be exposed to solvent, and one can think of the protein as turning inside out.  Whether this is in fact what happens, I don't know.  Gary Pielak studies proteins in vivo by NMR, and possibly he would have some experimental data or better insight.

This may be due to osmosis where the ethanol permeates into the cell increasing or decreasing the internal pressure causing the cell membrane to rupture.
This is not my area but an (semi)-educated guess!
Development Chemists do it on Scale, Research Chemists just do it!
