How about trying to base it off another game.
Or...
You can do a go fish style game where your given X number of cards and you have to try to make compounds out of them. You do a sliding scale for complex compounds. Ex. 1 pt for compounds with 2-3 atoms, 2 pts for compounds with 4-6 atoms, etc.

Play around with different ideas and mix them around.

have you played taboo before?
"Say you're in a [chemical] plant and there's a snake on the floor. What are you going to do? Call a consultant? Get a meeting together to talk about which color is the snake? Employees should do one thing: walk over there and you step on the friggin snake." - Jean-Pierre Garnier, CEO of Glaxosmithkline, June 2006

This seems like fun.
The first thing that comes to mind is create a game like
Trivial Pursuit
But that might be considered not inventive enough
