Food additive-Fumaric acid

Hello,
I know fumaric acid is a kind of food additive, and I know a part of uses of it.
Fumaric acid can be used as a food additive - sour agent, used to cool and refreshing beverage, fruit, jelly, ice cream, etc, and mostly use with sour agent citric acid ;
Fumaric acid and sodium hydroxide reaction made of a single salt, also used as a sour condiment, also as the intermediate of synthetic resin, mordant.
Fumaric acid salt has been used to treat severe psoriasis, nowadays; the researchers found that the drug can also help to prevent multiple sclerosis.

I want to know more information about fumaric aicd, such as which substances can react with it?

Do you mean "react" in the chemical sense (i.e. Fumaric acid + X  :rarrow: Y) or do you mean which substances does it interact with i.e. pharmacologically?

Yes, I mean this (Fumaric acid + X  :rarrow: Y) or (X+Y  :rarrow: Fumaric acid).
It's all Ok! Do you know? Or can you give me a website to learn more?

As with all organic chemistry you need to look at the molecule and identify the functional groups and then consider the reactions of those groups with each other and with other chemicals.

Fumaric acid is relatively simple.

What functional groups are present in fumaric acid?

Fumaric acid is an intermediate in an important cyclic process in biochemistry.  Are you more interested in what it reacts with in the biochemical sense, or in the sense of reactions not catalyzed by enzymes?
