SWAGMAR (Scientific Wild Ass Guess Made At Random)

Assuming 1 liter of carrot juice contains 40 grams of sugar
using the calculator at

I get dry taste as less than 4 percent ethanol
Seems to me that brewing yeast could convert most all the sugar in carrot juice to ethanol in less than 4 days

I of course cheated and did not write out the formulas as shown in WIKI

C12H22O11 + H2O + invertase → 2C6H12O6
C6H12O6 + Zymase → 2C2H5OH + 2CO2
And then do the computations

I may pay for my sins in being chided mightily for the gross inaccuracies of my assumptions as to likely sugar content in 1 liter and sloppy use of a calculator. Maybe some day I will repent.
