What are the effects of organic solvents on the antioxidant activity of the compounds they are tested in? Suppose I tested a flavonoid A in three solvents: methanol, n-butanol and ethylacetate.

Nothing will happen with these three solvents. Alcohols are oxidized under rather strong conditions and with strong oxidants, while ethyl acetate is not oxidizesable at all. Contrary, flavonoids can prevent peroxide formation of ethers and THF. Therefore, a slight deterioration of flavonoid is expected, when being stored in ethers or THF, for a long time.
