Oil removal from emulsion

If I have an emulsion of water and oil, in a large quantity, what would be the best way to remove it? Also, I've been seeing salts being used to help separate out this oil from its emulsion, can I know the mechanism of this process?

Sometimes it helps to filter the emulsion through a pad of Celite

I second Rolnor's suggestion. Some emulsions also break over time.
