Need Help (smoke from bread)

Hi... I have a subject in chemistry about bread right now.

If you're baking bread, and it stays in the oven too long, it will begin to smoke (and the bread is burned).
I would like to to know, which molecules the smoke is made of.
I have searched about it for an hour now, but I just can't find anything :(

If anyone knows, what this smoke is made of, I would be happy to know (in particular if you have a good link too)

Mostly elementar carbon.
