Substitution vs elimination

From the picture, I only draw the mechanism(SN1) for the first cpd (E-form)

Will this involve E1?

Also, for second cpd, will SN2 and E2 exist also?

From my notes, for elimination, if chiral centre has been found in reactant, for chiral medium (EtOH/EtO-), racemic mixture is formed. What is chiral medium???

Is AcO-Na+/AcOH is chiral medium?
