I am a student with bachelor degree in inorganic chemistry. Answer to my question,
What happens when sodium bicarbonate is heated?

It undergoes thermal decomposition to Sodium Carbonate, Water and Carbon Dioxide:

2NaHCO3 ? Na2CO3 + H2O + CO2
