Hello and tanks for your help 

Actually; I want to preparation EtOH from sugar and in this method sacharose change to +D-Glucose and D-fructose then Glucose changes to EtOH
In your opinion, is this Conscionable, Adding some Zymogenic, which taken from juice of grape in acidic solution of Glucose and fructose?
