fat extraction by acid hydrolysis

Does anyone know what is the mechanism for the acid hydrolysis for fat extraction? A sample undergoes acid hydrolysis prior to extraction by diethyl ether and pet ether.  In the acid hydrolysis, ethanol and HCl are added so that the fat can be made into easily extractable forms. But I don't know the mechanism.

Probably just a transesterification reaction.  Many fats are esters of glycerol and fatty acids.  Adding HCl and ethanol would convert these triacylglycerols to ethyl fatty acid esters and glycerol.
