There's a lot in your given information to help you narrow down the structure, and from the correct structure you can get the IUPAC name (obviusly, nothing less than a complete correct structure will give you a name):
O-H on the 3rd Carbon
aldehyde group on the 3rd carbon
This is quite telling, right here. What does this mean?
and a C-O bond on carbon 5
Interesting too.
a c=c in between the 1st and 2nd carbon
Useful.
I have looked at the IR spectrum of a compound with an empirical formula of C3H6O and worked out that its molecular formula is C9H18O3
This helps you narrow it down.
