what structural feature distinguishes fats from oils?

If the R groups are saturated the glycerides are solids at room temperature and called fats.

Double bonds in the R groups lower the melting point, so highly unsaturated glycerides are oils.

So I think basically all you need to know is

fats= solids, saturated, and animals
oils=liquids, unsaturated, and plants

Sound right?
