I know very little about chemistry.... ???

But I am concerned with health....

Does anyone know why the PH of distilled or RO water read 5.5 - 6.0 PH when measured?

(i'm not exactly sure if this is true but the website http://www.snyderhealth.com/water_ionizers/distilled_and_reverse_osmosis_water.html, sure insists it is)

My understanding was that pure water was neutral or 7.0 PH and that distilled or RO was about as pure as you could get...

Can anyone explain in layman terms?

If not kept sealed water gets contaminated with carbon doxide, that makes it acidic.
